Cooking!

Most of you probably know that aside from photography, my other favorite "hobby" is cooking. In an effort to challenge myself to blog more frequently, I'll be writing a post every Sunday reflecting on one of my favorite recipes from the past week. I guess I'd say that I average cooking 6 nights a week, and I'm always trying something new, usually out of the month's Cooking Light magazine, with which I'm mildly obsessed.

So here goes -- this week I began trying recipes out of November's CL issue. Last Sunday evening I made the Sweet Potato and Butternut Gratin as a side dish for chicken breast and salad. It turned out really nicely. (Of course, can you ever really go wrong with sweet potatoes and butternut squash?) The gratin was layered with baking potatoes on the bottom, then sweet potatoes, and then butternut squash. In addition a nice milky cheese sause, the gratin was topped with Gruyere cheese, which added a great complimentary nutty taste. Perhaps the best thing about this dish - cooked in an 11x7 baking dish - was that the leftovers tasted great for the next 2 days and went well with the rest of our main dishes for the week!
